Simple And Easy Chocolate Cake Gluten Free

Last week is my kid's birthday month. He've been asking me for a Gluten Free Chocolate cake with strawberries on top of it.

So that day, I came up with a new chocolate cake recipe and made the cake just like my son requested

At first thought, i didn't expect much from the recipe cause i just mix this and that without too much R&D. But suprisingly it turned out super tasty, rose beautifully!

The cake has just the right  amount of sweetness, with a soft,moist and fluffy texture inside.

Not too sweet yet tasty. 

If you want it even more moist, you can add on things like yogurt, mashed banana, melted chocolate and many more

In this recipe, I used hot water technique to get that soft moist texture for the chocolate cake.

The ingredients I used in this recipe super simple and easy to find at any nearby store. 

Dry Ingredients:

  • 70g Rice Flour
  • 25g tapioca starch
  • 25g cornstarch (not cornflour)
  • 1/4tsp xanthan gum
  • 1/2tsp himsalt
  • 20g dark cocoa powder

Wet Ingredients:

  • 100g coconut sugar
  • 2 eggs (100g)
  • 1 1/2 tsp acv
  • 1 tsp vanilla
  • 80g cooking coconut oil
  • 70g water 
  • 70g fresh milk ( I used A2 milk)

How to Make It:

  • Preheat your oven to 150°C, top and bottom heat (no fan).
  • Prepare your pan — I lined mine with baking paper to make it easier to remove later.
1. In a bowl, mix together all the dry ingredients. Set aside.
2. In another bowl, combine oil, coconut sugar, eggs, apple cider vinegar, and vanilla. Mix well.
3. Add the dry ingredients into the wet mixture and stir until smooth. The texture will be a bit thick — that’s okay! Set it aside.
4. In a small pot, heat up the milk + water mixture just slightly ( don’t boil it)
Make sure the total liquid equals 140g when you use it.
5. Pour the hot liquid into the batter from Step 3. Stir until well combined. The batter will become runny  totally normal! Hehe.
6. Pour the batter into your cake pan. I used a 10x10cm loaf pan (because I couldn’t find my usual cake pan . Why do they always disappear when I need them? 😅).
So the chocolate cake ended up rising tall like a loaf of bread 😂
7. Since the pan is already preheated, pop it into the oven and bake for around 50 minutes, or until fully cooked.
Test with a skewer in the center. If it comes out without any wet batter, it’s done.
(If there's a bit of soft cake sticking but no liquid, that's fine, it means it's cooked!)
8. Remove the cake from the pan and let it cool on a wire rack.
I’m not a big fan of cream… or even cake, to be honest 😂  especially not with cream!


You can pour on some keto chocolate sauce (recipe's IN HERE under the keto condensed milk), or decorate with fruits, or sprinkle some allulose

This cake rises really tall , about double the height of the batter after pouring into the pan. It’s light, soft, and fluffy.
