So, there's this viral Thai milk bun on TikTok, right?
This is just a basic recipe.
Honestly, i never thought of making it because I'm not into super sweet bread like the ones trending.
But then, my husband asked to try making it. Haha! So, that night i started calculate new formula recipe and try making it on the next day.
Surprisingly, both my husband and kids loves the milk bun!
It kinda taste like bread pudding, milky taste which has always been one of his all time favorite dessert.
I think maybe because i used sugar free condensed milk as toppings. Haha!

In this recipe, i didn't use any sugar at all. Instead, i went with a sugar free sweetener (allulose)
The only source of sugar comes naturally from the carbs in flour and lactose in milk powder
Plus, you don't actually need sugar to activate yeast in your recipe. There's already natural sugar in the flour itself and in other ingredients like honey, milk, fruits and so on.

Owh, another cool thing about this recipe is that, i used a lower ratio of xanthan gum and glucomannan konjac powder compared to my first binder combination ratio I shared earlier in my DIY Flour Blend
So, basically i have 2 type of binder ratios that are:
- Xanthan gum : Psyllium Husk (3:1)
- Xanthan gum : Glucomannan ( 1:2 )
You can switch up the ratio to suit your taste
In this recipe, i used Binder no 2, but i switch the percentage to know how's my bread will taste.

This is just a basic recipe.
Feel free to experiment with your own favorite ingredients. You can tweak and adjust the binder, the milk, the flour, and maybe if you want to add acv or baking powder to match your own taste.
I'm using minimal ingredients that i have in my lab studio, so that i can read the recipe's potential without any extra ingredients
@asmrdhia Milk Bun Gluten Free You can tweak this recipe using different ingredients as your taste and preferences Dry Ingredients: 🟢175g white rice flour 100% 🟢85g Tapioca starch 🟢20g allulose sweetener 🟢4g instant dry yeast 🟢3g himalayan salt 🟢4g xanthan gum 🟢2g konjac glucomannan powder 🟢1 tsp vanilla powder (optional) 🟢15g milk powder (grass fed cow) Wet ingredients: 🔴100ml coconut milk 🔴55g water 🔴2 eggs large size 🔴20g coconut oil Instructions: 1. Mix all dry ingredients in a bowl. Whisk and set set aside 2. In a different bowl, mix coconut milk cream with eggs. Stir until well combined, then pour into dry ingredients 3. Use handmixer or stand mixer or you can use your hand too to mix the dough 4. Add water to balance dough texture 5. Lastly, add oil and mix it or knead it until well combined. u will get smooth dough as you can see in the video. The dough slightly sticky but it's ok. No worries. You can use rice flour to cover the sticky texture while u rounding the bun. 6. Cover the bun and let it rise (i let it rise for 35minutes, 1.5x to 2x rise i think) 7. While waiting, prepare the toppings. I used sugar free condensed milk homemade. U can make it as topping but all u need to do is blend it maybe for 10 minutes or until get soft peak texture. 8. Preheat your oven 160°c (oven thermometre) then bake your bun when it's ready. But before bake, glaze your bun with butter 9. Bake for 25 minutes or until it's fully cooked inside. How to know the bread is done? Insert a long stick into the centre of the bread and pull it out. If it's still wet, the bread isn't done yet. If it's sticky chewy, then it's ready to be taken out of the oven Let it cool before put on any toppings (cream condensed milk and milk powder) notes: make sure use milk powder with NO maltodextrin, add on sugar, colouring ,etc. I used dehydrated grass fed cow's milk powder imported from new zealand. #foodie #food #glutenfree #thaimilkbun ♬ La vie en rose (Cover Edith Piaf) - 田东昱
